190 ProVee, Merc 200 carb

Have a 2002 190 ProVee, Merc 200 carb,10" jackplate, 25 tempest plus. Best I can get out of it is 68 with one person, half tanks of gas, tackle on board. Have tried raising and lowering jackplate from top to bottom. Seems to run best about 1" below. Can anyone tell me what top speed I should expect? Have had the boat for 8 yrs. and had given up trying. At wide open throttle boat handles a little wild too, but that's only at about 65-68. Mercury even replaced the power head when it was new, but this didn't help any at all.
Are the 200 carb Mercs just plain slow?

Have you tried other props along with messing with the jackplate. Sounds a little slow to me also. Im no speed tech or nothing but try going to bass boat central boat forums there is always guys on there willing to help ya out.

P.s. Alot of times driving through the chine walk (gettin crazy) and thats where the speed comes after that.

you need to install hydraulic steering and nose cone. I had same problem, now drive boat with one hand.
